Over the last several years I've been diagnosed with one autoimmune disorder after another. None hit me so hard as the most recent one... diabetes. I'm a food lover and having to be careful about what I eat and when I eat and trying to figure out how many carbs are involved so I can inject the right amount of insulin, did not fit well with my lifestyle.
After watching this video: http://topdocumentaryfilms.com/simply-raw-reversing-diabetes-in-30-days/ I was convinced to give a raw food diet a try. Not only might it help me cut back on (hopefully someday cut out) my insulin, it fit with my love of cooking and new foods.
Since I'm also a data lover, I thought I'd use this as a forum to store and analyze the metrics I collect while on this little experiment plus track recipe failures and successes.
Here are the parameters:
- I will evaluate at 30 days and if all is going well, go for 3 mos. From there, may re-evaluate after a year. For now, I'm focusing on the first 30 days.
- I'm only going 75% raw because I've heard if you go 100% it's difficult to eat any cooked food without getting sick. I'm doing this for myself, nobody else.
- I have nobody's expectations to live up to but my own.
There will probably be more but there you go, that's a start.
